I haven't been able to kill one yet because they keep fleeing. Is that typical? Both fights were outside in daylight, dies that affect their behavior? I believe that they randomly teleport away while in daylight, because whenever its daytime all the endermen teleport away in intervals "This True, I pick true. Not hard at all".
User Info: DarkLaguna. Yeah, Endermen are passive in sunlight, so they'll just teleport randomly until they find a place with a low enough light level. Fight them in lower light conditions nighttime, underground if you want to really fight them. I feel a draft on my butt User Info: Jiminip. Try wearing a pumpkin on your head, no, I'm serious. Also if you have a pumpkin equipped they won't aggro you until you attack them. In the PC version if you wear a pumpkin they don't teleport if within melee range.
I haven't found any pumpkins on to test this yet. From the Wiki: If the player wears a pumpkin on his or her head and looks at an Enderman, it will not turn hostile when looked at. Once provoked, however, wearing a pumpkin will not prevent it from attacking or teleporting, though it will not teleport away if the player is within melee range.
